Rainy day baking

So the rain has set in and we all know that this is highly likely to result in baking. I'm not sure why but it does in our house, so we decided to try a recipe that we have looked at a couple of times - peanut butter cookies. No flour or sugar, just a cup of peanut butter, some bi-carb soda and an egg. That is it - its a leap of faith, but we tried them and found they really needed something added to them. So we cracked open a tub of chocolate frosting, turned them into sandwich cookies and it was brilliant. We've made these a couple of times now, the first time they were too big - so second time around we imagined kingston biscuits and went for that size. The peanut butter flavour is fantastic. They do soften up a bit after a couple of days, so get a wriggle on and eat them up quickly.
