Lemon Cake....almost a drizzle

So I've moved away from biscuits for a bit and trying my hand at using the fruit powders in a cake.
I love a drizzle cake, no icing for me I'd rather put a sprinkle of icing sugar over it after it has cooled. So you could make this cake by boiling two whole lemons and blitzing them in a food processor OR I tried adding 40g of lemon fruit powder. It was so nice, tangy yet not too tart and it was super moist. I made a nice syrup afterwards and whilst it was hot from the over, stabbed it with a toothpick all over the bottom and then poured some syrup over it. I left it for an hour and then turned it out - I think you should always use a decorative tin for this recipe - the syrup almost guarantees the cake will come out easily, so its a safe bet.

I've also tried this with he orange fruit powder and it was great - I'd like to add some sticky orange slices cooked in syrup or even Cointreau next time. A boozy cake is always good.
